With this easy and delicious granola recipe, you can have a sweet treat to suit your breakfast meals and late night cravings.
Growing up with a very health-conscious mother, I am no stranger to the sometimes quite annoying compromise of flavor for health. So when I find a recipe absent of this compromise I feel obligated to share it with others who have felt my pain. The beautiful blend of savory and sweet compliment the nice crunch of oven baked oats to make this great granola. But don’t take my word for it, try it and let your taste buds do the convincing.
3/4 cup brown sugar
1/4 cup water
3 cups rolled oats
1/2 teaspoon salt
1 cup chopped walnuts
2 teaspoons ground cinnamon
1 tablespoon honey
2 teaspoons vanilla extract
GETTING IT STARTED.
First preheat your oven to 275 degrees. Then cover a baking sheet with wax or parchment paper.
Then make the “sauce” for the oats. Mix the brown sugar and water together in a microwave safe container. Heat the mixture in the microwave until the sugar is dissolved, about 1 minute.
PUTTING IT TOGETHER.
Now it’s time to dress up the oats. Combine the oats, salt, and cinnamon in a large bowl. And then stir in the sugar mixture, honey, and vanilla extract. Make sure all the ingredients are mixed well together and then pour the mixture onto the prepared baking sheet. Spread the oats evenly on the pan and squeeze a few handfuls of the oats into a few clusters to create some extra crunch.
Time to bring the heat. Bake the oats for 20 minutes and then take the pan out and give the oats a gentle stir. Place the pan back in the oven and bake them for an additional 25 minutes. The granola should be done when it’s slightly browned and slightly crunchy. Take it out the oven and let it cool to allow the granola to continue to harden.
EATING AND STORING.
Once the granola has cooled and hardened add some milk for a nice cold cereal breakfast meal or leave it dry and enjoy it as a snack. Often I double the recipe making a big batch on Monday and storing it in an air-tight container to enjoy throughout the week.
