Spice Up Your Semester.

Every study break needs a treat. So why not give yourself a treat fit for the season? Reward your taste buds with these quick and easy pumpkin muffins. With the extra heartiness of oats and the gooey sweetness of pumpkin spice chips this treat is perfect for any fall midterm break.


1 cup all-purpose flour

1/2 cup packed brown sugar

2 teaspoons baking powder

2 teaspoons cinnamon

1/2 teaspoon salt

1/4 teaspoon baking soda

1 egg, lightly beaten

3/4 cup canned pumpkin

1/4 cup + 2 Tbs milk

1/4 cup sunflower oil/canola oil

1 cup old-fashioned oats

1/2 cup pumpkin spice or cinnamon chips

Batter Time.

Preheat oven 375 C

In a large bowl stir the flour, sugar, baking powder, cinnamon, salt, and baking soda together. In a smaller bowl mix together the canned pumpkin, egg, and oil. Once combined well, add the wet mixture to the dry ingredients along with the oats and pumpkin spice chips. Stir gently until well combined.

Bake Time.

Once the batter is done. Fill your muffin pans with cupcake liners and fill each cup to the rim with batter. Place in oven and bake for 15 to 20 minutes or until a toothpick comes out clean.

Bam. Done.

Makes a dozen.

Servin’ Time.

These muffins are served best warm with a refreshing glass of milk or a soothing cup of tea. So drop the textbook, pick up a can of pumpkin and spice it up.
