Summer Crumble.
Nothing says summer to a Southerner more than fresh apple pie and a heaping scoop of creamy vanilla ice cream. So here’s my little twist on a Southern classic. An apple crumble made with an oat flour crust, deliciously tart Granny Smith apples and a sweet maple oat topping.
Ingredients.
Crust.
2 cups of old fashion oatmeal
1/2 cup (1 stick) butter (cut into squares)
1/2 cup granulated sugar
Filling.
5 granny smith apples (sliced into wedges)
1/3 cup maple syrup
2 tbs brown sugar
1 teaspoon cinnamon
1 tbs of lemon juice
1 teaspoon vanilla
3 tablespoons butter
1 tablespoon oat flour
Topping.
2 cups of old fashion oatmeal
4 tbs of brown sugar
1 1/2 teaspoons cinnamon
5 tbs butter
Crust.
The fun part about this crust is that its made with homemade oat flour. It’s super easy to make. This recipe actually came about while I was staying at my grandmothers house in California and I had to whip up an impromptu birthday pie for my cousin with not a lick of flour in the house.
To make the flour simply place the oats in a blender and blend until there are a powdery consistency. Boom that’s all there is to it.
Now combine the flour with the butter and sugar in a with the paddle attachment of your stand up mixer or with a fork until it forms a dough
Set dough aside.
Filling.
*Once you finish cutting the apples make sure you top them with the tablespoon of lemon juice to prevent them from browning.
To start it off heat up the butter in a skillet at medium heat. Once the butter melts and begins to bubble, add the apples, the sugar and maple syrup.
Next, let the apples cook for 5 minutes or until just becoming tender. Then add the cinnamon, vanilla, the oat flour and the water. Let cook for another 2 minutes or until a nice thick sauce has formed.
Take off heat set aside.
Topping.
Now for the final piece. To make the topping just mix the oats, cinnamon, brown sugar and butter together until it clumps up a little. Boom that’s it.
Assembly.
To assemble the crumble start off with the crust. Simply pat it into an ungreased pie pan making sure to press it along the sides of pan.
Next, add the apple filling to the pan and spread it evenly across the crust.
Then, sprinkle the topping across the filling. To finish it off add a few tablespoons of butter on top.
Baking.
Bake in oven at 350 F for 25 to 30 mins or until the top is browned and crust is firm.
Serving.
Once the crumble is done baking, let it cool for 10 – 15 minutes. Then grab a large spoon and dish up a big scoop of crumble with an equally large scoop of your favorite vanilla ice cream.(No need to be gentle it’s meant to crumble)
Boom. Done.
